About this wine
Vineyard and terroir
The grapes come from vineyards in the Pressano area, situated at 300 metres above sea level with west and southwest exposures. The vines are 25 years old. Chardonnay and Pinot Grigio are Guyot-trained at a density of 7,000 plants per hectare, while Pinot Bianco is Pergola-trained at 4,000 vines per hectare.
Vinification
Each variety is picked separately according to ripeness. After destemming and gentle crushing, the grapes undergo several hours of cold maceration, followed by gentle pressing. The must settles for 12 hours before fermentation at a controlled temperature.
Ageing
The wine matures in large oak barrels for 10 months.
