About this wine
Vineyard and terroir
The vineyards lie on the hilly, well-ventilated southern side of Cori.
Vinification
The grapes are harvested between 10 and 20 September, then gently pressed and destemmed. After one day of static settling, fermentation proceeds for 10 days at 15 °C. The wine remains on its fine lees for two months and does not undergo malolactic fermentation.
Ageing
The wine matures for six months in stainless-steel tanks, followed by six months in bottle.

Label / history
The name Castore refers to one of the mythical Dioscuri, worshipped at the ancient Temple of Castor and Pollux. The temple’s ruins are among Cori’s archaeological treasures.
