About this wine
Vineyard and terroir
The grapes grow in Cincinnato’s vineyards in Lazio. Illirio is a distinctive hill in the Cori growing area, with well-structured clay soil and an exceptionally sunny aspect. Cool air currents from the Lepini Mountains produce noticeable differences between daytime and nighttime temperatures.
Grapes
The Malvasia component is Malvasia del Lazio.
Vinification
The grapes are harvested between 10 and 20 September, then destemmed and gently pressed. The juice settles statically for one day before fermenting for 10 days at 15 °C. Malolactic fermentation is prevented.
Ageing
The wine matures for six months in stainless-steel tanks and a further six months in bottle.
Tasting profile
The wine is refreshing.
