About this wine
Vineyard and terroir
The grapes grow in the producer’s vineyards on the well-ventilated, hilly southern side of Cori, at 200–250 m above sea level. The soils are volcanic clay, and yields per hectare are kept low.
Grapes
Nero Buono is an ancient variety with centuries of tradition, revived through research and experimentation. The grapes undergo careful selection.
Vinification
Harvest takes place between 25 September and 5 October. The grapes are gently pressed and destemmed, then fermented for 12 days at a controlled temperature of 23 °C with extended skin contact. Malolactic fermentation follows.
Ageing
The wine matures for one year in French oak barriques, followed by a further eight months in bottle.
Label / history
The wine takes its name from the Temple of Hercules, whose ruins are among Cori’s archaeological sites.
