About this wine
Vineyard and terroir
The producer’s vineyards are situated on the well-ventilated, hilly southern side of Cori, at 100–200 m above sea level. The soils are volcanic clay.
Vinification
The grapes are harvested between 25 September and 5 October, then gently pressed and destemmed. Fermentation lasts 10 days at a controlled temperature of 24 °C, followed by malolactic fermentation.
Ageing
The wine matures in stainless-steel tanks for one year, followed by six months in bottle.
Label / history
The name Polluce refers to one of the mythical Dioscuri worshipped at the ancient Temple of Castor and Pollux, whose ruins are among Cori’s archaeological treasures.
