About this wine

Vineyard and terroir

The grapes grow in Cincinnato’s own vineyards. The Raverosse vineyard lies on red limestone outcrops linking the Lepini Mountains with the volcanic hills of the countryside around Cori. The rocks absorb heat by day and release it gradually at night, aiding ripening.

Vinification

The fully ripe, healthy grapes are harvested in early October, then gently pressed and destemmed. After extended contact with the skins, fermentation takes place for 10 days at a controlled temperature of 24 °C.

Ageing

The wine matures for eight months in new barriques, followed by 12 months in bottle.
