Vineyard and terroir
The grapes are grown in Castelvetro.
Vinification
The grapes are traditionally pressed with 36 hours of maceration. A short fermentation at 18–20 °C is followed by a long second fermentation in closed tanks using the Charmat, or cuves closes, method.
Tasting profile
Elegant and well balanced, with soft texture, a light sparkle and enough natural acidity to balance its gentle sweetness.
Serving and pairing
Serve in tall, cone-shaped glasses, such as Bordeaux glasses.
Label / history
The Chiarli family introduced the wine a hundred years after founding the company in 1860. Its name, “Centenario”, means “Centenary”. It presented a gently sweet style of Lambrusco and used the Charmat method that Chiarli had introduced to Lambrusco production several years earlier.
