About this wine
Vineyard and terroir
The vines grow around a 16th-century farmhouse in Colle di Val d’Elsa, Tuscany, at 220 metres above sea level. The soil is clay rich in fossils. Vines, animals, vegetables, fruit and nuts form an interconnected ecosystem. An afternoon sea breeze cools and refreshes the soil, contributing saline and mineral character to the grapes.
Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested entirely by hand at optimal ripeness, gently pressed and macerated for four months. The wine is bottled without added sulphites at the end of April in the year after harvest.
Tasting profile
Saline and mineral in character.
