About this wine
Vineyard and terroir
The grapes grow in fossil-rich clay soils around a 16th-century farmhouse in Colle di Val d’Elsa, Tuscany, at 220 metres above sea level. Vines form part of a balanced ecosystem that also includes animals, vegetables, fruit and nut trees. An afternoon sea breeze freshens the soil and contributes a saline, mineral character to the grapes.
Grapes
The wine is produced from a selection of Sangiovese grapes.
Vinification
The grapes are harvested entirely by hand at optimal ripeness, usually in early September. After a short maceration, they are pressed and fermented spontaneously with native yeasts in stainless-steel tanks. The wine is bottled without added sulfites.
