About this wine
Vineyard and terroir
The vines grow around a 16th-century farmhouse in Colle di Val d'Elsa, at 220 m above sea level, on clay soil rich in fossils. The vines are 55 years old. Afternoon sea breezes cool the soil and give the grapes a deep, saline, mineral character. Colombaia is run as a whole ecosystem in which vines, animals, vegetables, fruit and nuts live in balance and support one another.
Grapes
Sangiovese makes up 80% of the blend. The rest is Colorino, Canaiolo and Malvasia Nera. The grapes are selected.
Vinification
The grapes are harvested entirely by hand when fully ripe, usually in mid-September. They are pressed and ferment spontaneously in concrete tanks, with the cap kept submerged.
Ageing
The wine ages for 36 months in 26 hL Slavonian oak barrels. It is bottled without added sulfites.
