About this wine
Vineyard and terroir
The vines grow around a 16th-century farmhouse in Colle di Val d'Elsa, at 220 m above sea level, in clay soil rich in fossils. Colombaia is run as an entire ecosystem in which vines, animals, vegetables, fruit and nuts live in harmony and support one another. An afternoon sea breeze cools the soil and gives the grapes a deep saline, mineral character. The vines are 55 years old.
Grapes
The Sangiovese is a selection of grapes from old vineyards.
Vinification
The grapes are harvested entirely by hand when fully ripe. They undergo extended skin maceration in stainless steel tanks before pressing. The wine is natural and lightly sparkling, and it is bottled without added sulfites.
Ageing
The wine is aged in bottle for three years.
