About this wine
Vineyard and terroir
The Primitivo grows on medium-textured limestone soils, in vineyards that run from north to south. The vines are 70 years old on average, planted at 5200 vines/ha, with yields of no more than 65 hl/ha.
Vinification
The grapes are harvested in the last ten days of September. Vinification takes place in automatically controlled stainless steel tanks at 25 °C. Fermentation lasts 20–30 days, including 10–15 days of skin contact, and is followed by malolactic fermentation. Fermentation, maturation and stabilization all take place in inert stainless steel vessels, which helps preserve the wine's pure, natural fruit character.
Ageing
The wine has good potential for long-term ageing and further development.
Label / history
The name refers to the seventh generation of the Taurino winemaking family. About 12000 bottles are produced each year. The same estate also makes Salice Salentino Rosso and Salento Patriglione.
