About this wine
Vineyard and terroir
The grapes grow on the plains of Manduria, in vineyards with a north–south orientation and medium-textured limestone soils. The vines are 20–30 years old, planted at 5,500 vines/ha, and yield no more than 80 hl/ha.
Vinification
The grapes are harvested in September. After 8–12 hours of skin contact, fermentation takes place for 40 days at a controlled temperature of 14–16 °C in automatically regulated stainless-steel tanks. Before bottling, the wine is clarified, chilled and filtered.
Ageing
Maturation and stabilisation take place exclusively in inert stainless-steel vessels, helping to preserve the wine’s clean, natural fruit character.
Label / history
The name “Scaloti” comes from the municipality of Contrada, where the grapes are grown. Annual production is approximately 12,000 bottles.
