About this wine
Vineyard and terroir
The fruit comes from a 2-hectare plot on the northern side of Mount Etna, at 800–1,000 m above sea level. The freestanding vines are 150 years old. The altitude and terroir slow ripening, encouraging the development of rich tannins and a distinctive aroma.
Vinification
The grapes are harvested by hand during the final ten days of October. After crushing, they macerate for 18–21 days at 28 °C. Malolactic fermentation takes place in 25-hL barrels and large tonneaux.
Ageing
The wine matures in 25-hL barrels and large tonneaux.
Tasting profile
Concentrated, with rich tannins and a distinctive aroma.
