About this wine
Vineyard and terroir
The fruit is grown in Sicily on clay, sandy and rocky soils and is harvested by hand at optimal ripeness.
Vinification
This natural, organic wine undergoes seven days of skin maceration, followed by spontaneous fermentation in steel vats.
Ageing
The wine matures for seven months in steel tanks.
Label / history
The winemakers developed this approach after five years of working with Catarratto, a variety widely cultivated around Alcamo and regarded as a symbol of the town. They chose prolonged skin contact in contrast to the skin-free, pasteurized and heavily filtered style adopted by large producers over the preceding 20 years, viewing the skins as central to Catarratto’s character. The label depicts a katana slicing a grape in half, representing this break with earlier practices.
