About this wine
Grapes
Selected Montepulciano grapes are used, including partially dried grapes added during the second fermentation.
Vinification
The grapes are harvested from late September to mid-October, then crushed and fermented for two weeks. The wine subsequently rests in steel vats. In December, it undergoes a second fermentation using the Rigoverno technique, during which partially dried Montepulciano grapes are added.
Ageing
The wine matures for 12 months in 500 L French oak barrels, followed by a further two to three months in bottle in the cellar.
Serving and pairing
Pair with chicken, rabbit, roasted red meat, pasta or cheese.
