About this wine

Vineyard and terroir

The estate vineyards are 25–60 years old and lie predominantly on the western hills between Barolo and Novello. Their high elevations protect the fruit from thermal inversions, permitting longer hang time and gradual phenolic ripening while preserving Dolcetto’s natural vibrancy and elegance.

Permanent grass cover and spontaneous vegetation have been maintained for more than five decades. This approach preserves soil structure, supports microbial life and encourages natural crop development. Aldo Vaira began embracing organic farming in Piemonte in 1971 while still a university student.

Grapes

100% Dolcetto. Traditionally, Dolcetto occupied prime sites immediately above Nebbiolo parcels. The variety continues to be cultivated in carefully selected vineyards suited to its character, as a tribute to an often-overlooked part of Piemonte’s heritage.

Vinification

The 2025 grapes were harvested between 3 and 15 September. Vinification lasted an average of 15–18 days. Two rackings preceded spontaneous malolactic fermentation in stainless-steel vats.

Ageing

The wine matured exclusively in stainless steel for an average of five months, retaining freshness and brightness. Bottling took place on 18 March 2026.

Tasting profile

The 2025 vintage has a deep, luminous purple color. Its refined, expressive bouquet combines raspberry, blackcurrant, prune and cherry with delicate floral nuances and a subtle touch of nutmeg. The palate is vibrant and finely textured, with supple tannins defining a graceful, harmonious structure. Ripe red and dark-fruit flavors lead into a long, poised finish marked by lingering freshness and understated complexity.

Vintage notes

The 2025 harvest began across the estate on 19 August and progressed under bright conditions with pronounced day–night temperature differences, helping preserve freshness and precision. Yields were small, while the fruit showed notable radiance and beauty. Dolcetto itself was picked from 3 to 15 September.
