About this wine

Vineyard and terroir

The Dolcetto comes from estate vineyards in La Morra, Roddino and Sinio. Vines are trained to Guyot.

Grapes

100% Dolcetto.

Vinification

The 2024 fermented for seven days at controlled temperature, with daily punch-downs and pump-overs. Across the estate, fruit is harvested by hand, transported immediately to the cellar, carefully sorted, destemmed and crushed. Alcoholic fermentation relies on indigenous yeasts. After pressing and a coarse racking, spontaneous malolactic fermentation occurs in stainless steel.

Ageing

Six months, divided between stainless-steel tanks and used barriques.

Technical data

The 2024 yielded 50 q/ha and reached 13% alcohol. Production was 6,870 bottles.

Tasting profile

The nose opens with a delicate savoury veil over blueberry and cherry, lifted by peony and violet. The palate is silky, weightless and vibrant. Polished, fine tannins frame rose petal, subtle pepper and a cool herbal nuance. Blue fruit, sage and floral perfume linger through a juicy, refreshing finish. The wine favors purity and agility over power.

Serving and pairing

Serve at 16–18°C. Pair with bonito tataki, raspberries and red-fruit ponzu sauce. Ageing potential is up to five years.
