About this wine
Vineyard and terroir
The vines were planted in the 1970s on south-facing hills at 350 m above sea level, on clay and partly sandy soils. The estate's vineyards lie in Granieri, a village in the municipality of Caltagirone.
Vinification
The grapes are harvested by hand, carefully sorted and destemmed. They macerate briefly, for around 36 hours, in a concrete tank, then are pressed gently in a manual screw press. Fermentation uses only natural yeasts.
Ageing
The 2018 vintage was aged for at least one year in old 70-hectolitre oak casks. The wine is bottled without any processing, following the lunar calendar during the waning moon.
Tasting profile
Elegant and dry, with lively character and distinctive varietal qualities that it keeps for many years.
