About this wine
Vineyard and terroir
The vineyards lie in Gragnieri, a small village in southern Italy within the municipality of Caltagirone. The vines were planted in the 1970s on south-facing hills at 350 m above sea level, in clay soils with a sandy component.
Vinification
The grapes are harvested by hand, sorted and destemmed. They undergo a brief maceration of around 36 hours in a concrete tank before gentle pressing in a manual screw press. Fermentation relies exclusively on natural yeasts. The finished wine is bottled without treatment, according to the lunar calendar during the waning moon.
Ageing
The 2015 vintage matured for three years in old 70 hl oak casks.

The wine reflects the centuries-old winemaking tradition passed through generations of the Giovanni Sallemi family estate.
