About this wine
Vineyard and terroir
The estate’s vineyards lie near Granieri, in the municipality of Caltagirone. The vines were planted in the 1970s on south-facing hills at 350 m above sea level, in clay soils containing some sand.
Vinification
The grapes are harvested by hand, sorted and destemmed. They macerate in concrete for approximately 36 hours before gentle pressing in a manual screw press. Fermentation relies exclusively on natural yeasts. The wine is bottled without treatment during the waning moon, in accordance with the lunar calendar.
Ageing
The 2017 vintage matured for more than two and a half years in old 70 hL oak casks.
