About this wine
Vineyard and terroir
The estate's vineyards are in Granieri, a small village in southern Italy within the municipality of Caltagirone. The vines, planted in the 1970s, grow on south-facing hills at 350 m above sea level, in clay and partly sandy soils. Nero d'Avola has been grown here for centuries.
Vinification
The grapes are harvested by hand at optimal ripeness, then carefully sorted and destemmed at the winery. They macerate briefly in a concrete tank for about 36 hours, followed by gentle pressing in a manual screw press. Fermentation uses only natural yeasts.
Ageing
The 2015 vintage was aged in steel tanks for 3 years. The wine is bottled without any treatment, following the lunar calendar during the waning moon.
Tasting profile
Elegant and impeccably balanced. Aroma and flavour express the grape variety and the land where it grows.
Label / history
The wine comes from the Sallemi family estate, where winemaking tradition has been passed down through generations.
