About this wine
Vineyard and terroir
The fruit grows at around 400 m above sea level in soils composed mainly of limestone and white clay. The Mediterranean climate has moderate summer and winter temperatures due to sea breezes, and the vineyard has excellent sun exposure. No chemicals, pesticides or herbicides are used; copper and sulfur treatments are kept to a minimum.
Vinification
The grapes are usually harvested by hand in the second half of September. They spend 24 hours on the skins, with spontaneous fermentation by wild yeasts taking place in amphora. After pressing, the wine is transferred to terracotta amphorae. It is bottled without added sulfites, fining or filtration.
Ageing
The wine ages briefly in terracotta amphorae.
