About this wine
Vineyard and terroir
The Primitivo is grown organically in Puglia, in southern Italy, where heat and drought are typical. The vineyards lie at high elevation, which helps the wine keep its freshness and minerality. The soils are mainly limestone. No chemicals, pesticides or herbicides are used in the vineyard, and copper and sulfur are kept to a minimum.
Vinification
The grapes are harvested by hand and fermented on their skins for one week.
Ageing
The wine is aged in vats until the beginning of the following spring, then bottled young.
Tasting profile
Fresh and spicy, with minerality, and full of life.
Serving and pairing
Pairs well with the rustic dishes commonly served in Puglia's trattorias.
