About this wine
Vineyard and terroir
The grapes grow in the vineyards of Gioia del Colle, on soils that are mainly limestone. The Mediterranean climate keeps summer and winter temperatures moderate thanks to sea breezes, and the excellent sun exposure lets the grapes ripen well. No chemicals, pesticides or herbicides are used in the vineyard, and copper and sulfur are kept to a minimum.
Vinification
The must spends 24 hours in contact with the skins, which gives the wine its ruby hue and distinctive flavour notes. Fermentation takes place in porcelain amphorae. The wine then rests briefly in vats before bottling, so that its elements come together. The whole winemaking process lasts around 60 days. The wine is bottled without fining or filtration.
