Vineyard and terroir
The grapes grow on hillsides with clay-limestone soils at 360 metres above sea level.
Vinification
Greco and Falanghina are harvested by hand in early October. Fiano is allowed to overripen and harvested by hand in late October. Greco and Falanghina are vinified in temperature-controlled stainless-steel tanks, while Fiano undergoes low-temperature skin maceration in first- and second-fill oak barrels.
Ageing
Greco and Falanghina remain on the lees for 6–8 months. Fiano rests in oak barrels with periodic bâtonnage. After blending, the wine is bottled and aged for a further three months.

Label / history
The wine takes its name from Faius, a Roman who lived during the Roman Empire and owned the hill where the I Capitani winery now stands. It originated as a project to blend several of Campania’s best-known white grape varieties.
