About this wine

Vineyard and terroir

The fruit comes from Il Poggiolo’s vineyards in Montalcino. This sparkling wine is made entirely from Sangiovese Grosso—the same variety locally associated with Brunello—and represents an experimental facet of Rudy Cosimi’s winemaking.

Grapes

100% Sangiovese Grosso (Brunello).

Vinification

Whole berries undergo gentle pressing. The must ferments in stainless steel at 18°C, while the secondary fermentation takes place in bottle according to the traditional method at 12°C.

Ageing

The wine matures on its lees in bottle for 36 months at 12–14°C. Following disgorgement, it rests for a further 9 months in the temperature-controlled cellar before release.

Technical data

Annual production is limited to 4,000 bottles.

Tasting profile

The wine is described as straw yellow with delicate yet clearly visible pink reflections, while the technical tasting note characterizes its colour as lightly amber. Its mousse is lively and effervescent, with a fine, abundant and persistent perlage. Aromas evoke flowers, bread crust and yeast. The palate has a pleasantly tart note and finishes with a delicate bitter nuance.
