About this wine
Vineyard and terroir
The fruit comes from the Fontanelle vineyard, where the soils are clay.
Vinification
The grapes are harvested during the last ten days of September. A four-day pre-fermentation maceration at low temperature is followed by traditional maceration, alcoholic fermentation and malolactic fermentation. These processes take place over 25 days at a controlled temperature not exceeding 28 °C.
Ageing
The wine matures for 13–15 months in barriques and 42-hectolitre oak casks, followed by 10 months in bottle in the winery’s cellars.
Label / history
In the local dialect, “chieto” means “calm.”
