About this wine
Vineyard and terroir
The grapes come from the "Fontanelle" vineyard in the commune of Piave. Merlot prefers moist soils, and the alluvial soils of the Piave area suit its ripening.
Vinification
The grapes are harvested by hand in late September. At the winery they are destemmed and crushed, then given a cold maceration of 5 days at 5 °C, followed by 10 days of traditional maceration to extract as much tannin and aromatic material as possible. The must ferments at a controlled temperature of 21–22 °C.
Ageing
After fermentation the wine ages for 9 months in French oak barrels, then 4 months in bottle in the winery's cellars. This long maturation gives the wine its velvety texture, softness and subtle smoky notes.
Tasting profile
A very soft wine whose main strength is its soft, velvety character. The bouquet is intriguing and complex, with typical notes of wild berries and hints of spice, tobacco and cocoa. Subtle smoky notes come from the ageing.
Serving and pairing
Pairs with a variety of meat dishes, pasta and cheeses. Classic matches are guinea fowl in sauce and chicken risotto.
