About this wine
Vineyard and terroir
The organically farmed vineyards lie in the municipalities of Affi and Cavaion Veronese, at 190 metres above sea level with a southern exposure. The Guyot-trained vines average 12 years of age.
Vinification
The grapes are harvested at optimal ripeness and vinified separately. Maceration and spontaneous fermentation last 7–8 days, with délestage every morning. This gravity-based process drains off the wine while the upper layer is gently stirred, after which the grapes remaining at the top are pressed. Malolactic fermentation follows.
Ageing
After malolactic fermentation, the wine rests in stainless-steel tanks until spring and is then bottled.
Serving and pairing
Pair with light dishes featuring tender red meat or with young cheeses.
