About this wine
Vineyard and terroir
The fruit is organically grown in south-facing vineyards in the communes of Affi and Cavaion Veronese, at 190 metres above sea level. The Guyot-trained vines average 12 years of age.
Vinification
The grapes are harvested at optimal ripeness and the two varieties are vinified separately. Cold maceration lasts 6–8 hours, followed by fermentation in steel vats at a controlled 17 °C.
Ageing
The wine matures on its fine lees in 50 hL stainless steel tanks until the spring after the harvest, when it is bottled.
Serving and pairing
Suitable as an aperitif and with antipasti, light meat dishes, snacks, fish soups, egg dishes and young cheeses.
