About this wine
Vineyard and terroir
The organic fruit comes from the estate’s oldest vines, which are more than 60 years old, in high-altitude vineyards in Montalcino. Brunello regulations require vineyards to occupy sunny hillsides at no more than 600 metres above sea level, helping the grapes attain optimal ripeness and flavour before harvest.
Vinification
The grapes are harvested at optimal ripeness and sorted at the winery, with only the best bunches retained. Fermentation and maceration take place in concrete vats for 25–90 days, with regular manual pump-overs. The wine is then gently pressed from the skins and bottled without filtration or fining, with a minimal addition of sulphur.
Ageing
The wine matures for 36 months in large, 25-hectolitre Slavonian oak casks.
