About this wine

Grapes

100% Pignolo, harvested by hand at full ripeness in the first week of September.

Vinification

Maceration lasts 15–20 days in truncated conical wooden vats and open tonneaux. Manual punch-downs, délestage and pump-overs provide extraction. The wine is then drawn off and the pomace pressed traditionally. After settling for one day to remove coarse material, it is transferred to new barriques, where malolactic fermentation takes place.

Ageing

The wine matures for 24 months in barriques. After blending, it rests for another two months in a large vat, followed by two years of bottle ageing before release.

Tasting profile

Deep, intense ruby red with violet reflections. Plum, violet, cherry and mulberry mingle with cocoa, coffee, leather, vanilla and spice, with the same aromatic spectrum continuing onto the palate. Fruit, tannins and balanced acidity shape a powerful, characterful and long-lived red.

Serving and pairing

Serve with game main courses. The wine page recommends 18°C, while the technical sheet gives 12°C.

Label / history

The label’s synaesthetic theme is the Adriatic Sea: a dancer moves across the water in a dress that contains marine life.
