About this wine
Vineyard and terroir
The grapes are grown around the 45th parallel north, in soils combining calcareous marl and gypsum.
Vinification
The grapes are harvested at optimum ripeness, destemmed and gently pressed. The base wine ferments at a controlled temperature of 16–18 °C. Secondary fermentation takes place in sealed autoclaves according to the Italian Charmat method. The wine is sterile-bottled at low temperature.
Ageing
During ageing, the wine undergoes numerous analytical checks to ensure its integrity.
