About this wine
Vineyard and terroir
The organic grapes are grown near the 45th parallel, in clay soils containing deposits of limestone, sand and gypsum. The vines are cultivated without chemicals or genetically modified organisms.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. After crushing and destemming, they undergo cold maceration to enhance aromatic extraction. The juice is gently separated from the skins by pressing, then fermented with selected yeasts at a controlled temperature of approximately 16 °C. Only environmentally responsible winemaking products approved under European regulations are used.
Ageing
The wine rests on its fine lees in stainless-steel tanks for six months. During this period, it undergoes numerous analytical checks to verify its quality and the absence of animal-derived products.
