About this wine
Vineyard and terroir
The organic Trebbiano fruit comes from vines in Puglia, grown without chemicals or genetically modified organisms. The clay-limestone soils contain traces of marl. Puglia’s warm, southerly setting combines a long Mediterranean coastline and plains that rise gradually towards low mountains; fresh sea breezes cool the sun-heated ground.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. After crushing and destemming, they undergo cold maceration to enhance aromatic extraction, followed by gentle pressing. The juice ferments with selected yeasts at a controlled temperature of approximately 16 °C. Only environmentally responsible vinification products permitted under European regulations are used.
Ageing
The wine rests on its fine lees in stainless-steel tanks for three months. During this period, repeated analytical checks verify its quality and confirm the absence of animal-derived products.
