About this wine
Vineyard and terroir
The grapes are grown in vineyards in Salento, Apulia, on clay and silt soils containing calcareous marl.
Vinification
The grapes are harvested by hand, then destemmed and crushed at the winery. Maceration on the skins lasts 15 days. Fermentation takes place with selected yeasts at a controlled temperature of 25 °C. The wine undergoes numerous analytical checks during production and is bottled under cold, sterile conditions.
Ageing
The wine is aged in steel tanks.
