About this wine
Vineyard and terroir
The fruit comes from a 6 ha site in the Salento area of Puglia, in southern Italy. The climate is hot, dry and Mediterranean, with plenty of sunny days and sea breezes that help the grapes ripen. The vines are more than 15 years old and grow in chalky soils with a top layer of clay.
Vinification
The grapes are picked by hand while slightly underripe, to preserve their natural acidity. They are destemmed, gently pressed and macerated on the skins for 15 days. Fermentation is spontaneous, with natural yeasts, in steel vats.
Ageing
The wine ages for 6–7 months in stainless steel tanks. It is bottled without filtration or fining.
Serving and pairing
Decant 15–30 minutes before serving.
Label / history
"Sole Rosa" means "Pink Sun" in Italian.
