About this wine
Vineyard and terroir
The vineyards are in Salento, in southern Puglia, where the climate is hot, dry and arid. Li Veli uses the traditional “settonce” training system, planting the vines at high density to maximize sunlight exposure and maintain good air circulation. This promotes even ripening and reduces susceptibility to disease. Terroirs and vineyard exposures were selected to suit the variety.
Vinification
The grapes were harvested by hand in the first week of October, sorted on a conveyor belt, destemmed and pressed. Fermentation took place under temperature control at 22–28 °C to preserve the fruit character. The wine was then transferred to French oak barrels for malolactic fermentation.
Ageing
The wine matured for 12 months in 225-litre French oak barrels.
Label / history
Askos was created as a project highlighting ancient native grape varieties from Puglia that are at risk of disappearing. Its name comes from the Greek word “askos,” meaning “carafe,” and refers to the winemaking tradition established in the region by the ancient Greeks. Archaeological finds throughout Puglia, including the remains of wine vessels, attest to this history. The settonce training system is depicted on an ancient hexagonal coin with a hole in its centre.
