About this wine
Vineyard and terroir
The vines grow in Puglia at 200–400 m above sea level, on sandy soils and calcareous clay. They are 25–50 years old.
Vinification
The grapes are harvested by hand, destemmed and cold-macerated for 18–36 hours. Alcoholic fermentation takes place on the skins in temperature-controlled steel vats. The wine is then gently pressed from the pomace and transferred to French oak barrels for malolactic fermentation.
Ageing
The wine ages in French oak for around one year, followed by at least four months in the winery’s cellars after bottling.
