About this wine

Vineyard and terroir

The vineyards lie in Serralunga d’Alba, on middle and upper hillside sites at 300–350 metres. They face southeast and southwest and are rooted in soils rich in clay and calcareous marl.

Grapes

100% Dolcetto.

Vinification

Traditional fermentation lasts 8–10 days in stainless-steel vats at a controlled temperature of 25°C. Malolactic fermentation takes place in concrete tanks and is completed before the end of November.

Ageing

The wine spends two months in medium and large oak barrels ranging from 20 to 140 hl. It is bottled and given a further six months of maturation before release.

Technical data

Alcohol: 13% vol. Average production: 49 hl/ha. Available format: 0.75 L.

Tasting profile

Deep ruby red with violet highlights. The fine, persistent fruit-driven bouquet evokes violet, blueberry, black cherry and rosemary. The palate is pleasantly dry and full, with soft tannins and an appealing almond-toned finish.

Serving and pairing

Serve at 16°C with hot starters, pasta, simply prepared meat dishes, and fresh or medium-aged cheeses.
