Vineyard and terroir
Moscato Bianco grows at 450 m above sea level with south-west exposure. The fine, calcareous Typic Ustorthent hillside soils derive from the Lequio formation, characterized by alternating sandstone of varying cementation, sand and compact marl. Planted in 1965 at 4,000 vines per hectare, the vineyard is trellised and Guyot-pruned. Yields are 10,000 kg of grapes and 7,500 L of wine per hectare.

100% Moscato Bianco.
Vinification
Harvest takes place within the first ten days of September. The grapes are destemmed, crushed and chilled to 10–13°C, then gently pressed pneumatically to separate the skins from the must. The juice settles for about two days in temperature-controlled stainless-steel tanks at 13°C. After clarification, it is filtered and stored in stainless steel at 0°C. Before bottling, the must is transferred to sealed tanks and inoculated with selected yeasts for partial sugar fermentation using the Martinotti-Charmat method. Clarification is followed by isobaric bottling, preserving the gentle bubbles. Bottle pressure does not exceed 2 bar.
Tasting profile
Light straw yellow, with fine, persistent bubbles. The fragrant, varietally typical bouquet combines floral, fruity and herbal notes and recalls fresh grapes. The palate is aromatic, sweet, crisp and characteristic, with balanced acidity; the carbon dioxide heightens grape-like retronasal sensations.
Serving and pairing
Serve at 12°C with desserts, fresh fruit or aged cheese.
