About this wine
Vineyard and terroir
The vines grow on the south-facing side of the Roncagliette vineyard, in firm clay-limestone soils. They were planted by Olek Bondonio’s grandfather and are farmed organically, with some biodynamic practices.
Grapes
The wine uses Pelaverga Piccolo, a rare form of the variety that has almost disappeared. Bondonio’s planting is the only one outside the commune of Verduno, where the variety originates.
Vinification
Depending on the vintage, fermentation takes place in stainless-steel or concrete tanks with native yeasts. The wine is bottled without fining or filtration, with 10–20 ppm of sulfur added immediately before bottling.
Ageing
It spends a short period in neutral barrels to retain freshness and liveliness.
Tasting profile
Spicy, notably fruity and mineral, with a fresher, less rustic and less peppery character than many other examples from the region.
Label / history
Giulietta is Olek Bondonio’s daughter, after whom the wine is named.
