About this wine
Vineyard and terroir
Roncagliette is a steep, southwest-facing amphitheatre at 350 metres above sea level. Its 50-year-old vines grow in very heavy clay over blue marl. The vineyard is farmed organically, with some biodynamic practices.
Vinification
The grapes are harvested by hand. Vinification lasts about two months in concrete vats, with prolonged contact between the wine, skins and solids. At the beginning of fermentation, the cap is regularly pushed down to maximize colour and tannin extraction. After pressing, the wine is bottled without fining or filtration. A moderate dose of sulfur, no more than 10–20 ppm, is added immediately before bottling.
Ageing
The wine matures in large botti for at least 20 months.
Tasting profile
The wine has pure, elegant character and retains Nebbiolo’s typical aromas. It has a pleasantly firm, refined edge.
Serving and pairing
Decant before serving to allow its full character to open.
