About this wine

Vinification

The grapes are harvested at optimal ripeness, then crushed and destemmed. Maceration with selected yeasts lasts approximately 6–7 days, followed by fermentation at a controlled temperature.

Ageing

After fermentation, the wine matures in concrete vats and stainless-steel tanks for six months. It then rests in bottle for a further 2–3 months before release.

Tasting profile

Elegant in character, with aromas of myrtle, Sardinian woodland and strawberry tree berries. Saline coastal notes evoke a sea breeze, while black pepper adds a tingling quality to the nose.

Label / history

Salvatore Pala founded the winery in Sardinia in 1950. His sons Mario and Enrico now continue his work, having modernised the equipment and operation.
