About this wine
Vineyard and terroir
The fruit is grown in the province of Brindisi in Puglia’s Salento area.
Vinification
The grapes are harvested at night to preserve freshness and collected in 5 kg boxes to keep them intact. They undergo cold maceration for 6–8 hours to extract aromas, followed by gentle pressing and static clarification of the must. Fermentation takes place at 16–17 °C for 10–12 days.
Ageing
The wine rests on its lees in stainless-steel tanks for three months.
