About this wine
Vineyard and terroir
The grapes are grown in Salento, in the province of Brindisi, Puglia.
Vinification
The grapes are harvested at dawn to preserve freshness. After crushing, they are gently pressed, and the must undergoes static clarification before fermentation at 15 °C for 10 days.
Ageing
The wine rests partly in stainless-steel tanks and partly in new barriques for four months, followed by one month in bottle.
