About this wine
Vineyard and terroir
The vineyards are located in the province of Trapani, a few metres above sea level. The soils are sandy with a small clay component, and the climate is hot and Mediterranean, allowing the grapes to ripen fully.
Grapes
The wine is made from a blend of Grillo, Inzolia and Catarratto, three native varieties grown mainly in Sicily.
Vinification
The grapes are harvested by hand in September and fermented at a controlled temperature of 20–22 °C. The traditional “concia” technique is used, blending the base wine with mistelle containing grape spirit and with concentrated must known as “mosto cotto.”
Ageing
The wine ages in oak barrels for 12 months, followed by several additional months in bottle.
Tasting profile
Soft and balanced, with rich aromas of spices and dried fruit.
Serving and pairing
Suitable as an aperitif or digestif and for cooking Italian dishes.
