About this wine
Vineyard and terroir
The grapes are grown in the Asti area and harvested at optimal ripeness.
Vinification
After gentle pressing, the juice is chilled and transferred to a steel tank. Fermentation begins with selected yeasts and proceeds in a sealed tank for 48 hours at a controlled 18–19 °C. It is stopped before completion by rapidly lowering the temperature, preserving 80 g/L of residual sugar. The wine is produced using the Italian Charmat method, then microfiltered and bottled.
Ageing
The wine rests briefly in tank before bottling.
