About this wine
Vineyard and terroir
CASASILIA comes from the Sangiovese parcel around the cellar and house, with the fruit selected from the estate’s oldest vines. It is made entirely from estate-grown grapes and is certified organic, with synthetic fertilizers and pesticides excluded from the vineyard and organic guidelines followed in the cellar.
Grapes
100% Sangiovese.
Vinification
Selection occurs in three stages. First, fruit is chosen from the Sangiovese parcel around the winery and residence. Shortly before harvest, the crop is reduced to the healthiest single cluster on each vine and allowed to ripen for another 5–10 days. Following the manual harvest at the beginning of October, every grape is inspected by hand at the cellar. Fermentation takes place in stainless steel, with maceration lasting more than 20 days to extract aroma, colour and structure.
Ageing
The wine matures for 18 months in first- and second-fill barriques. After the first 12 months, the family assesses every barrel; only the best lots remain in the final CASASILIA selection. Bottling takes place in April.
Technical data
Chianti Classico Gran Selezione. Certified organic. The 2022 current release has 14.5% alcohol, with production of approximately 8,000 bottles.
Tasting profile
Deep, expansive fruit is joined by blackberry, forest-floor and fine Havana-tobacco aromas. The palate combines intensity with polished, mature elegance, finishing exceptionally long.
Serving and pairing
Serve at 16–18°C. Pair with red meat such as Bistecca alla Fiorentina or venison and with powerful, savoury aged cheeses. Recommended drinking window: now through 2031.
Label / history
